  • 5 ½ oz white chocolate
  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • Pinch of salt
  • 3 ½ oz kataifi pastry
  • 1 tbsp butter
  • 9 oz milk chocolate
  • ¾ cup all-purpose flour
  • ⅔ cup cornstarch
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 cup water

Instructions

  1. In a mixing bowl, whisk together flour, cornstarch, sugar, and salt.
  2. Add vegetable oil and water; mix until smooth.
  3. Let the batter rest for about 30 minutes.
  4. Heat a nonstick pan over medium-low heat and pipe thin strands of batter onto the pan.
  5. Cook until set (about 30–45 seconds), then transfer to a towel to cool.
  6. For the pistachio cream, melt white chocolate and double cream together.
  7. Blend ground pistachios with salt; combine with melted chocolate mixture.
  8. Toast kataifi in butter until golden brown.
  9. Mix toasted kataifi into the pistachio cream; chill for an hour.
  10. Roll chilled mixture into balls and coat with melted milk chocolate.
  11. Refrigerate until set.
