  • 1/2 English cucumber
  • 3 cups halved cherry tomatoes
  • 8 oz fresh mozzarella balls or diced mozzarella
  • 1 large diced avocado
  • 1/3 cup chopped fresh basil
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, pressed or grated
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Wash all produce thoroughly. Slice the cucumber into quarters and then chop into bite-sized pieces. Halve the cherry tomatoes and dice the avocado.
  2. In a large mixing bowl, combine the cucumber, cherry tomatoes, mozzarella, avocado, and basil. Gently toss to combine.
  3. In a separate bowl, whisk together olive oil, balsamic vinegar, pressed garlic, sea salt, and black pepper.
  4. Pour the dressing over the salad mixture and toss gently to coat evenly.
