  • 8 oz dry rotini pasta
  • 9 oz hard turkey slices, chopped
  • 6.5 oz turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • ½ cup pepperoncini, sliced
  • 8 oz mozzarella pearls
  • ¼ cup red onion, sliced thin
  • ⅓ cup fresh basil, sliced thin
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 garlic cloves, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and allow it to cool completely.
  2. In a small bowl or jar, whisk together the olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper.
  3. Prepare the salad ingredients by chopping the turkey slices and turkey pepperoni; halving the tomatoes; slicing olives and red onion; and chopping fresh basil.
  4. In a large bowl, mix all prepared ingredients with cooled pasta. Pour in the vinaigrette to taste and toss until evenly coated. Chill in the refrigerator for at least 30 minutes before serving.
