  • 1 tbsp olive oil
  • 2 lbs chicken thighs and legs
  • salt (to taste)
  • 4 shallots (diced) or one medium onion
  • 1 rib celery (diced)
  • 45 sprigs of thyme
  • 2 cloves garlic (minced)
  • 2 tbsp apple juice
  • 2 tbsp flour
  • 85 ml chicken stock
  • 2 apples (peeled, cored and cut into wedges)
  • 125 ml heavy cream

Instructions

  1. Preheat your oven to 180C/350F. Pat dry chicken pieces and season with salt.
  2. In a large casserole dish, heat olive oil over medium-high heat and brown the chicken until golden. Remove and set aside.
  3. In the same pan, sauté diced shallots and celery until soft, then add minced garlic.
  4. Deglaze with apple juice, stirring in flour until smooth. Gradually add chicken stock before returning the chicken.
  5. Cover and bake for 30 minutes; then uncover and bake for another 30 minutes.
  6. Sauté apple wedges until golden; stir into the casserole with cream before serving.
