  • 2½ tablespoons salted butter

  • Freshly cracked black pepper, to taste
  • 2 pounds yellow onion, halved and thinly sliced
  • 1½ tablespoons thyme, finely chopped
  • 6 cloves garlic, minced
  • ½ cup dry white grape juice
  • 2½ teaspoons dijon mustard
  • 2½ tablespoons all-purpose flour
  • 1 teaspoon worcestershire sauce
  • 1 large bay leaf
  • 2½ cups beef stock (low sodium)
  • 24 ounces gnocchi (store bought)
  • 1½ cups gruyere cheese (freshly grated)
  • ½ cup parmesan cheese (freshly grated)

Instructions

  1. Heat olive oil and butter in a skillet over medium heat. Add thinly sliced onions and cook slowly for 45-60 minutes until caramelized.
  2. Stir in chopped thyme and minced garlic; cook for 2 minutes until fragrant.
  3. Add white grape juice and let it reduce by half, then stir in flour, dijon mustard, and Worcestershire sauce.
  4. Pour in beef stock and add a bay leaf; bring to a boil then simmer for 6-7 minutes. Season to taste.
  5. Cook gnocchi in salted boiling water until they float (about 2-3 minutes), then drain and mix into the sauce.
  6. Transfer to an oven-safe dish, top with grated cheeses, broil for 3-5 minutes until bubbly.
  7. Serve hot, garnished with fresh thyme.
