  • 4 large Yukon Gold potatoes
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream (or whole milk)
  • ½ cup beef broth (or vegetable broth)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • 1 tablespoon butter (for greasing)

Instructions

  1. Sauté sliced onions in butter and olive oil over medium heat until caramelized, about 20 minutes.
  2. Add beef or vegetable broth to the onions and simmer for 5 minutes.
  3. Preheat oven to 375°F (190°C). Grease a baking dish with butter.
  4. Layer half of the potato slices in the baking dish, followed by half of the onion mixture and half of both cheeses. Repeat layers.
  5. Whisk together cream, salt, pepper, and thyme; pour over assembled layers.
  6. Cover with foil and bake for 45 minutes; uncover and bake an additional 15-20 minutes until golden brown.
