  • 1 tbsp Olive Oil
  • 1 tsp Salt

  • 300 g Cavatappi Macaroni
  • 5 Onions (thinly sliced)
  • 1/2 cup beef broth
  • 3 cups Heavy Cream
  • 1 cup Parmesan Cheese (grated)
  • 1 tbsp Flour + 3 tbsp water (for béchamel)
  • 1 tsp Sugar
  • Fresh Parsley (chopped)
  • 2 tsp salt
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika powder
  • 1/2 tsp nutmeg

Instructions

  1. Caramelize the onions: Heat olive oil in a skillet over medium heat, add thinly sliced onions, and sauté for 30–40 minutes until golden brown. Add a splash of beef broth if they stick.
  2. Prepare the béchamel: In the same skillet, melt butter (or use olive oil) over low-medium heat, whisk in flour, then gradually add heavy cream while whisking to prevent lumps.
  3. Combine flavors: Stir two-thirds of the caramelized onions into the béchamel along with salt, pepper, parsley, and Parmesan cheese; let simmer.
  4. Cook pasta: Boil salted water; cook cavatappi until just under al dente.
  5. Bring it all together: Mix cooked pasta with the béchamel sauce; transfer to a baking dish.
  6. Bake: Top with remaining onions and breadcrumbs; bake at 350°F (175°C) for 10–15 minutes until golden.
