Ingredients

  • Cavatappi macaroni
  • Onions (thinly sliced)
  • Olive oil
  • Beef broth
  • Heavy cream
  • Parmesan cheese (grated)
  • Breadcrumbs
  • Fresh parsley (chopped)

  • Pepper
  • Garlic powder
  • Smoked paprika

Instructions

  1. Thinly slice the onions and caramelize them in olive oil over medium heat for 30–40 minutes until golden brown.
  2. Deglaze with beef broth and simmer for an additional 10 minutes.
  3. In a separate skillet, make a béchamel sauce by whisking flour into melted butter before gradually adding heavy cream.
  4. Combine two-thirds of the caramelized onions with the béchamel sauce and season to taste.
  5. Cook cavatappi until just shy of al dente, drain, and mix with the sauce.
  6. Transfer to a baking dish, top with remaining onions and breadcrumbs, then bake at 350°F (175°C) for 10–15 minutes until golden.
