  • 2 tablespoons olive oil
  • 4 cloves garlic (chopped or crushed)
  • 1 medium onion (minced)
  • 1/2 cup chicken stock or white grape juice
  • Zest from 1 medium lemon
  • 1 tablespoon lemon juice
  • 1/2 teaspoon chili flakes (or to taste)
  • 4 tablespoons butter (divided)
  • 2 tablespoons chopped parsley
  • Salt and pepper to taste

Instructions

  1. Clean the mushrooms by brushing off dirt; trim any dried stems.
  2. Heat olive oil in a skillet over medium-high heat. Add mushrooms and sauté until browned, about 3-5 minutes.
  3. Add minced onions and garlic along with 2 tablespoons of butter. Cook until lightly caramelized, another 3-5 minutes.
  4. Pour in chicken stock or white grape juice, lemon zest, lemon juice, and chili flakes. Simmer for about 2 minutes until slightly reduced.
  5. Stir in remaining butter and chopped parsley; season with salt and pepper. Heat for one more minute before serving.
