  • 1 large bulb of garlic
  • 1.3 kg / 2.8 lb baking potatoes
  • 5 tbsp / 75g butter (2 tbsp melted; the rest at room temperature)
  • 2 tbsp double cream (at room temperature)
  • 60g / 3/4 cup freshly grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat the oven to 180C/356F. Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for about 50-60 minutes until golden and fragrant.
  2. Peel and dice the baking potatoes into large pieces. Boil in salted water until fork-tender, then drain and let them steam dry.
  3. In a mixing bowl, combine the cooked potatoes with butter, cream, roasted garlic (squeezed from skins), and Parmesan cheese. Season with salt and pepper to taste.
  4. Mix in egg yolks until fully blended for added richness.
  5. Pipe the mixture onto a lined baking tray into swirled shapes about 2.5-3 inches wide/high.
  6. Drizzle melted butter over each potato dollop and bake at 200C/400F for 15-20 minutes until golden brown.
