  • lbs baby potatoes, halved or quartered
  • 4 tablespoons olive oil (divided)
  • 4 tablespoons butter
  • 56 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Potatoes: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add halved baby potatoes and season with salt, pepper, and paprika. Cook for about 15 minutes until golden brown and fork-tender. Set aside.
  2. Sear the Steak: Season sirloin cubes with salt, pepper, and dried Italian herbs. In the same skillet, add another tablespoon of olive oil and 2 tablespoons of butter. Sear steak in batches for about 2–3 minutes on each side until browned.
  3. Add Garlic: Reduce heat to medium-low. Add remaining butter and minced garlic to the skillet. Sauté until fragrant (about one minute). Return potatoes to the skillet and toss everything together.
  4. Final Touches: Cook together for another minute or two to heat through. Garnish with fresh parsley before serving hot.
