  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic (minced)
  • ½ small red onion (finely chopped)
  • 1 ½ cups cherry tomatoes (halved)
  • ½ cup Kalamata olives (sliced)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ½ cup feta cheese (crumbled)
  • ½ cup reserved pasta water (if needed for sauce)
  • Fresh basil (for garnish, optional)

Instructions

  1. Cook the pasta in boiling water until al dente. Reserve ½ cup of pasta water, then drain.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic and red onion until fragrant.
  3. Add cherry tomatoes and Kalamata olives; cook until tomatoes soften.
  4. Stir in lemon juice, zest, oregano, salt, and pepper; cook for another minute.
  5. Toss cooked pasta into the skillet, adding reserved pasta water to achieve desired sauce consistency.
  6. Top with crumbled feta cheese and serve immediately.
