- 2 tbsp extra virgin olive oil
- 2 cloves garlic (minced)
- ½ small red onion (finely chopped)
- 1 ½ cups cherry tomatoes (halved)
- ½ cup Kalamata olives (sliced)
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp dried oregano
- ½ tsp dried basil
- ¼ tsp salt (or to taste)
- ¼ tsp black pepper
- ½ cup feta cheese (crumbled)
- ½ cup reserved pasta water (if needed for sauce)
- Fresh basil (for garnish, optional)
- Cook the pasta in boiling water until al dente. Reserve ½ cup of pasta water, then drain.
- In a skillet, heat olive oil over medium heat. Sauté garlic and red onion until fragrant.
- Add cherry tomatoes and Kalamata olives; cook until tomatoes soften.
- Stir in lemon juice, zest, oregano, salt, and pepper; cook for another minute.
- Toss cooked pasta into the skillet, adding reserved pasta water to achieve desired sauce consistency.
