  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey (or brown sugar)
  • 3 cloves garlic, minced
  • 1 can (20 oz) pineapple chunks, drained
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium red onion, cut into wedges

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, marinate chicken pieces with soy sauce, olive oil, honey, garlic, salt, pepper, ginger, and paprika for 10–15 minutes.
  3. Spread red and yellow bell peppers, onion wedges, and drained pineapple on a sheet pan.
  4. Place marinated chicken over vegetables and pour any leftover marinade on top.
  5. Bake for 25–30 minutes until chicken reaches an internal temperature of 165°F (74°C), stirring halfway through.
  6. Let rest for a few minutes before serving warm over rice or quinoa.
