  • 1 medium spaghetti squash
  • 1 tbsp olive oil
  • ½ cup diced onion
  • 2 cloves garlic (minced)
  • ½ cup plain Greek yogurt
  • 1½ cups shredded sharp cheddar cheese (divided)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Optional: ¼ tsp paprika or dried thyme

Instructions

  1. Preheat your oven to 400°F (205°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush with olive oil and place cut-side down on a baking sheet. Roast for about 40 minutes until tender.
  3. Sauté diced onions in olive oil over medium heat for about five minutes, then add garlic and cook for an additional minute.
  4. Once the squash is cool enough to handle, shred it into noodle-like strands.
  5. In a large bowl, combine shredded squash, sautéed onions and garlic, Greek yogurt, one cup of cheese, salt, pepper, and optional spices.
  6. Transfer the mixture to a greased casserole dish and top with remaining cheese. Bake at 375°F (190°C) for 20–25 minutes until hot and bubbly.
  7. Let cool slightly before serving.
