Ingredients

  • 1 tbsp butter
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 1 leek (sliced)
  • 2 cloves garlic (pressed)
  • 1 liter chicken stock
  • 250g cooked turkey or chicken (chopped)
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves
  • Salt and pepper to taste
  • Optional: 80ml heavy cream

Instructions

  1. In a large Dutch oven, melt the butter over medium heat. Cook the bacon until crispy, then drain excess fat, leaving about 2 tablespoons in the pot.
  2. Add leeks, carrots, celery, and thyme. Sauté for about 5 minutes until softened, then add garlic for an additional minute.
  3. Sprinkle flour over the vegetables and stir well. Gradually pour in the chicken stock while scraping any bits from the bottom of the pot.
  4. Add potatoes, turkey, and bay leaves. Bring to a gentle boil, then cover and simmer in a preheated oven at 180C/350F for approximately 45 minutes.
  5. If using heavy cream, stir it in before serving and garnish with fresh parsley.
