- 1 tbsp butter
- 2 carrots (cut into large pieces)
- 2 stalks celery (diced)
- 1 leek (sliced)
- 2 cloves garlic (pressed)
- 1 liter chicken stock
- 250g cooked turkey or chicken (chopped)
- 2 large potatoes (cut into large pieces)
- 2 bay leaves
- 1 tbsp fresh thyme leaves
- Salt and pepper to taste
- Optional: 80ml heavy cream
- In a large Dutch oven, melt the butter over medium heat. Cook the bacon until crispy, then drain excess fat, leaving about 2 tablespoons in the pot.
- Add leeks, carrots, celery, and thyme. Sauté for about 5 minutes until softened, then add garlic for an additional minute.
- Sprinkle flour over the vegetables and stir well. Gradually pour in the chicken stock while scraping any bits from the bottom of the pot.
- Add potatoes, turkey, and bay leaves. Bring to a gentle boil, then cover and simmer in a preheated oven at 180C/350F for approximately 45 minutes.
- If using heavy cream, stir it in before serving and garnish with fresh parsley.
