  • 2 carrots (sliced into rounds)
  • 3 cloves garlic (minced)
  • 2 lb jackfruit pieces (rinsed well)
  • 6 cups vegetable stock (low sodium)
  • 1/3 cup apple vinegar
  • 1 lb gnocchi (Italian potato dumplings)
  • 1 cup fresh tomatoes (diced)
  • 3/4 cup frozen green peas (thawed out and rinsed)

Instructions

  1. Preheat a heavy-bottomed Dutch oven over medium-low heat. Sauté the diced onion and sliced carrots until the onion turns translucent.
  2. Add minced garlic and cook until fragrant. Stir in rinsed jackfruit, thyme sprigs, bay leaves, and apple vinegar; simmer until most vinegar evaporates.
  3. In a bowl, whisk together whole wheat pastry flour with vegetable stock until smooth; pour into the pot with jackfruit.
  4. Bring everything to a simmer while stirring in smoked paprika and cloves. Let simmer for about 45 minutes until fork-tender.
  5. Add gnocchi, diced tomatoes, and thawed peas; cook until gnocchi float to the top.
  6. Remove thyme sprigs and whole cloves; season to taste with sea salt and black pepper. Fold in freshly chopped parsley before serving.
