  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. For the crust, mix together flour, granulated sugar, and salt. Cut in cold butter until crumbly. Press into the bottom of the pan and bake for 15–18 minutes until lightly golden.
  3. For the peach filling, combine sliced peaches with sugar, flour, lemon juice, and vanilla extract. Let sit to release juices.
  4. Prepare the crumb topping by mixing together flour, sugars, cinnamon, and salt; stir in melted butter until crumbly.
  5. Spread peach filling over the cooled crust and sprinkle with crumb topping. Bake for 45–50 minutes until golden.
