  • 24 ounces fresh green beans
  • 4 medium shallots
  • 8 ounces baby bella mushrooms
  • 1 tablespoon garlic
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy whipping cream
  • 1/2 cup grated parmesan cheese
  • 1 cup vegetable oil
  • 4 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon ground nutmeg
  • Kosher salt & freshly ground black pepper (to taste)

Instructions

  1. Heat vegetable oil in a skillet, fry sliced shallots until golden brown and crispy. Set aside.
  2. Blanch trimmed green beans in salted boiling water for 5–7 minutes until tender-crisp. Drain and set aside.
  3. In another pan, melt butter and sauté mushrooms and garlic until soft. Stir in flour to create a roux.
  4. Slowly whisk in chicken broth, then add lemon juice, Dijon mustard, herbs, salt, pepper, cream, and half the parmesan cheese.
  5. Combine cooked green beans with the mushroom sauce in a baking dish. Top with remaining parmesan and crispy shallots.
  6. Bake at 350°F (175°C) for about 25 minutes until bubbly.
