  • 24 ounces fresh green beans
  • 4 tablespoons unsalted butter
  • 8 ounces baby bella mushrooms
  • 1 cup vegetable oil (for frying shallots)
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy whipping cream
  • 1/2 cup freshly grated parmesan cheese
  • 4 medium shallots
  • 1 tablespoon garlic (minced or paste)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon ground nutmeg
  • Kosher salt & freshly ground black pepper (to taste)

Instructions

  1. Prepare crispy shallots by heating vegetable oil in a skillet and frying sliced shallots until golden brown.
  2. Blanch trimmed green beans in salted water for 3-4 minutes; transfer to an ice bath.
  3. In the same skillet, melt butter and sauté mushrooms until soft. Add garlic and flour, cooking until fragrant.
  4. Gradually stir in chicken broth, lemon juice, Dijon mustard, thyme, red pepper flakes, nutmeg, salt, and pepper; simmer until thickened.
  5. Combine blanched green beans with mushroom sauce and half of the parmesan in a baking dish. Top with crispy shallots and remaining parmesan.
  6. Bake at 350°F (175°C) for about 25 minutes until bubbly.
