Ingredients

Scale
  • 1 (15.25 ounce) box Devil's Food cake mix
  • 2 large eggs
  • 1/2 cup canola or vegetable oil
  • 1/2 cup unsalted butter (room temperature)
  • 2 1/4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 (7 ounce) jar vegan marshmallow crème
  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a large bowl, mix the cake mix, eggs, and oil until a soft dough forms.
  3. Drop spoonfuls of dough onto prepared baking sheets, spacing them about 2 inches apart.
  4. Bake cookies for 8-10 minutes until edges are set; they will firm up as they cool.
  5. To make the frosting, beat room-temperature butter until creamy, then gradually add powdered sugar, vanilla extract, and salt before folding in the vegan marshmallow crème.
  6. For the ganache, heat heavy cream in the microwave, pour over chocolate chips, let rest for a minute, then whisk until smooth.
  7. Frost cooled cookies with the marshmallow frosting and drizzle with ganache.
  8. Pipe reserved frosting into squiggles on top.
