  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • Lime zest from 1 lime
  • 1 teaspoon EACH chili powder, brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon EACH ground cumin, smoked paprika, onion powder, garlic powder
  • 1/4 teaspoon pepper
  • 1 teaspoon chipotle chili powder (optional for more heat)
  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, diced with seeds removed
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced (or 1/4 teaspoon garlic powder)
  • 1/4 teaspoon EACH ground cumin, salt
  • 1/8 teaspoon pepper (or more to taste)

Instructions

  1. In a bowl, combine olive oil, lime juice, zest, spices and whisk until blended.
  2. Marinate chicken in the mixture for at least 30 minutes in the fridge.
  3. Grill or cook chicken in a skillet over medium-high heat for about 5 minutes on each side until fully cooked.
  4. While the chicken cooks, mix together diced avocados, tomatoes, corn, onion, bell pepper, jalapeño, cilantro, garlic, lime juice, and seasonings in a separate bowl for the salsa.
  5. Serve chicken topped with avocado salsa and enjoy!
