  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1/2 cup celery, chopped
  • 1 jalapeno, finely chopped
  • 4 cloves garlic, minced
  • 14 1/2 ounces diced tomatoes
  • 3 ounces tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 cup bone broth
  • Salt and pepper, to taste
  • Cheddar cheese, for topping

Instructions

  1. In a skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
  2. Add chopped onions, celery, and bell pepper to the skillet; sauté until tender.
  3. Stir in minced garlic and jalapeno; cook until fragrant.
  4. Add chili powder, cumin, diced tomatoes (with juices), tomato paste, salt, and pepper; mix well.
  5. Pour in bone broth and let simmer uncovered for about 20 minutes to meld flavors.
