  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon baking soda
  • ½ cup coconut oil (melted)
  • ¼ teaspoon salt
  • 2 large lemons (juiced and zested)
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • ½ cup almond milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine rolled oats, flour, brown sugar, baking soda, and salt. Add melted coconut oil and mix well.
  3. Press two-thirds of the oat mixture into a greased 9×9 inch baking pan as the base.
  4. In another bowl, whisk together lemon juice, zest, granulated sugar, cornstarch, and almond milk until smooth. Pour over the crust.
  5. Sprinkle remaining oat mixture on top of the lemon filling.
  6. Bake for about 38 minutes until golden brown. Let cool completely before cutting into squares.
