  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • Olive oil, salt, and pepper (for seasoning)

Instructions

  1. Pound the chicken breasts to an even thickness. Season with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat. Cook the chicken for 3-4 minutes on each side until golden brown; set aside.
  3. In the same pan, sauté minced garlic until fragrant. Add chicken broth, lemon juice, and zest; bring to a boil.
  4. Reduce heat and stir in heavy cream. Simmer for about 5 minutes until slightly thickened, then mix in Parmesan cheese until melted.
  5. Add spinach to the sauce until wilted, return chicken to the pan, spooning sauce over it. Allow everything to meld together for another two minutes before serving.
