  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 150 grams fresh mozzarella, sliced or shredded
  • 2 tablespoons grated parmesan cheese

Instructions

  1. Preheat your oven and prepare the pizza dough according to your no-knead recipe.
  2. Slice and pat dry the fresh mozzarella if using water-packed cheese.
  3. Shape the dough into a rectangle on parchment paper, about 9×13 inches.
  4. Combine olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and pepper in a jar; shake well.
  5. Dimple the dough surface with your fingers and drizzle brine over it before adding mozzarella.
  6. Bake on a preheated pizza stone for about 8–10 minutes until golden brown.
  7. Finish with fresh lemon juice and parmesan cheese before serving.
