  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 4 ripe tomatoes, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté finely chopped onion until soft and translucent.
  2. Add garlic, ground cumin, paprika powders, and turmeric; sauté until fragrant.
  3. Stir in chopped tomatoes and tomato paste; cook until well combined and thickened.
  4. Mix in canned and dried beans along with veggie broth; simmer until heated through (or until dry beans are tender).
  5. Taste and adjust seasoning if necessary. Serve warm with fresh herbs as garnish.
