  • 2 large eggs
  • 1/2 cup pumpkin puree
  • 1/2 cup milk
  • 2 tablespoons melted butter
  • 2 cups powdered sugar
  • 1 tablespoon milk (for glaze)
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a donut pan with non-stick cooking spray.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, salt, and pumpkin pie spice.
  3. In a large bowl, mix the eggs, pumpkin puree, milk, and melted butter until smooth.
  4. Gradually add the dry ingredients to the wet mixture while stirring gently until just combined.
  5. Pipe the batter into the prepared donut pan, filling each mold three-quarters full.
  6. Bake for 8-10 minutes or until springy to the touch.
  7. Allow donuts to cool slightly before glazing by mixing powdered sugar, milk, maple syrup, and vanilla extract until smooth. Dunk each donut in the glaze and let excess drip off.
