  • 1 pound chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup long-grain rice (basmati or jasmine)
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper (red or yellow), diced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley or basil for garnish

Instructions

  1. In a large skillet or pot, heat olive oil over medium-high heat. Brown the seasoned chicken pieces for about 5-7 minutes.
  2. Remove chicken and sauté onion and garlic in the same skillet for 3-4 minutes until fragrant. Add diced bell pepper and cook for an additional 2 minutes.
  3. Stir in rice and toast lightly for about 1 minute before adding drained tomatoes and chicken broth. Bring to a simmer.
  4. Return chicken to the skillet and cover. Reduce heat to low; cook for 20-25 minutes until rice is tender.
  5. Stir in olives and feta cheese before fluffing the rice with a fork. Let sit for a few minutes before serving.
  6. Garnish with fresh parsley or basil.
