  • 1 lb. ground chicken
  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • ½ cup breadcrumbs
  • ¼ cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Heat one tablespoon of olive oil in a skillet over medium heat. Sauté the diced onion until translucent (about 5 minutes), then add minced garlic and sauté for another 30 seconds.
  2. In a large bowl, combine the sautéed onion mixture with ground chicken, chopped spinach, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well combined.
  3. Shape the mixture into approximately eight patties (½ inch thick).
  4. In the same skillet, heat the remaining olive oil over medium heat. Cook each patty for about 5-6 minutes on each side until golden brown.
  5. Drain on paper towels before serving warm.
