  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1 lb. ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Sauté diced onion in olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and cook for another 30 seconds.
  2. In a large bowl, combine the sautéed mixture with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well blended.
  3. Shape the mixture into approximately eight patties about half an inch thick.
  4. Heat remaining olive oil in a skillet over medium heat. Cook the patties for 5-6 minutes on each side until golden brown and cooked through.
  5. Serve warm with your choice of dips or garnishes.
