  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked brown rice, quinoa, or cauliflower rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • ⅓ cup crumbled feta cheese (omit for dairy-free)
  • ¼ cup fresh parsley or dill, chopped
  • 1 cup plain Greek yogurt (use coconut yogurt for dairy-free)
  • ½ cucumber, grated and excess water squeezed out
  • 1 tablespoon fresh dill, chopped
  • 3 tablespoons olive oil (for vinaigrette)
  • 2 tablespoons fresh lemon juice (for vinaigrette)
  • 1 teaspoon honey (omit for strict keto or Whole30)
  • 1 small clove garlic, minced (for vinaigrette)
  • ½ teaspoon dried oregano (for vinaigrette)

Instructions

  1. In a bowl, mix olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Add the sirloin steak and coat well. Refrigerate for at least 30 minutes.
  2. Heat a grill or skillet over medium-high heat. Cook the marinated steak for about 4–5 minutes per side for medium-rare. Allow it to rest before slicing.
  3. Combine Greek yogurt (or coconut yogurt), grated cucumber (excess water squeezed out), lemon juice, minced garlic, dill, salt, and pepper in a bowl. Chill until ready to serve.
  4. Divide your choice of base (rice or quinoa) into serving bowls. Top with sliced steak, cherry tomatoes, cucumber, red onion, olives, and fresh herbs.
  5. Drizzle each bowl with tzatziki sauce before serving immediately.
