  • 1 bell pepper, diced
  • 1 cup red onion, thinly sliced
  • 1 cup chickpeas, drained and rinsed
  • ½ cup feta cheese, crumbled
  • ¼ cup Kalamata olives, pitted and sliced
  • Fresh parsley for garnish

Instructions

  1. Marinate the steak by mixing olive oil, lemon juice, paprika, salt, and pepper in a bowl. Add the flank steak and let it marinate for 15-30 minutes.
  2. Cook quinoa or couscous according to package instructions and set aside.
  3. Preheat a grill over medium-high heat and grill the marinated steak for about 6–8 minutes on each side until desired doneness is reached.
  4. Let the steak rest for 5 minutes before slicing against the grain.
