  • 1 cup packed brown sugar
  • 1 cup cold butter
  • 5 large eggs
  • 1 cup dark corn syrup
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray two 12-cup muffin tins with non-stick cooking spray.
  2. In a mixing bowl, combine all-purpose flour, packed brown sugar, and cold butter. Mix until crumbly.
  3. Press about a tablespoon of the crust mixture into each muffin tin cup to form small cups.
  4. In another bowl, whisk together eggs, dark corn syrup, granulated sugar, vanilla extract, and salt until smooth.
  5. Stir in chopped pecans and fill each crust with the mixture (leaving some room for expansion).
  6. Bake for about 40 minutes or until the filling is set and slightly puffed. Allow cooling before removing from tins.
