  • 1 lb boneless, skinless chicken breast
  • 8 oz spaghetti
  • 1 tbsp olive oil
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 cup chicken broth
  • Optional: crushed red pepper flakes

Instructions

  1. Cook the spaghetti according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and smoked paprika and cook for about 6-7 minutes on each side until fully cooked. Remove from skillet and slice.
  3. In the same skillet, melt butter and sauté onions and garlic for about 2-3 minutes until softened.
  4. Pour in chicken broth and bring to a simmer; stir in heavy cream and let thicken for about 2 minutes.
  5. Reduce heat to low, add cheeses, and stir until melted and smooth.
  6. Toss cooked spaghetti into the sauce until evenly coated.
  7. Serve topped with sliced chicken and garnish with parsley and optional crushed red pepper flakes.
