  • 1 baguette (sliced into 1/2 inch thick rounds)
  • 1 tbsp olive oil (for brushing)
  • 250 g Baby Bella Mushrooms (thinly sliced)
  • 2 garlic cloves (minced)
  • 1/4 cup Marsala apple vinegar
  • 1 package Brie Cheese (sliced)
  • 1 tbsp salt and pepper (to taste)
  • 1 bunch fresh parsley (finely chopped for garnish)
  • 1 dash crushed red pepper flakes (optional for a little heat)

Instructions

  1. Preheat oven to 375°F (190°C). Slice the baguette into 1/2 inch rounds and brush both sides with olive oil. Toast in the oven for 3-5 minutes until golden brown.
  2. In a skillet over medium heat, warm olive oil and sauté minced garlic until fragrant (about 1 minute). Add sliced mushrooms and cook until golden brown (5-7 minutes). Pour in Marsala apple vinegar and simmer until reduced by half. Season with salt, pepper, and optional red pepper flakes.
  3. Assemble crostinis by laying brie slices on toasted baguette rounds and topping with the mushroom mixture. Place back on the baking sheet.
  4. Bake for an additional 3-5 minutes until brie starts melting. Garnish with chopped parsley before serving.
