  • 2 pounds pot roast (beef)
  • 2 russet potatoes, chopped
  • 1 bag frozen seasoning blend (or chopped onions)
  • 1 bag frozen peas
  • 1 bag frozen green beans
  • 1 bag frozen corn
  • 4 large carrots, chopped
  • 32 oz beef broth
  • 2 cans (10.75 oz each) tomato soup
  • Salt and pepper, to taste

Instructions

  1. 1. Season the pot roast with salt and pepper. Place in a slow cooker with half the beef broth and cook on LOW for about 10 hours until tender. Shred the meat.
  2. 2. In a large pot, heat oil over medium heat. Sauté chopped carrots and seasoning blend until tender.
  3. 3. Add shredded beef, potatoes, peas, green beans, corn, remaining beef broth, tomato soup, water, salt, and pepper to the pot. Stir gently to combine.
  4. 4. Bring to a boil over medium-high heat. Then lower heat, cover, and simmer for about an hour.
