  • 8 oz crumbled feta cheese
  • 1 cup ricotta cheese
  • 6 sheets phyllo pastry
  • ¼ cup melted butter or olive oil
  • ¼ cup honey
  • ½ tsp red chili flakes

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together crumbled feta, ricotta, and thyme until smooth.
  3. Cut phyllo sheets in half lengthwise and keep covered with a damp towel.
  4. Brush one strip of phyllo with melted butter/oil, add about 1 tablespoon of the cheese mixture, fold the sides in, and roll tightly.
  5. Place seam-side down on the baking sheet and repeat until all filling is used.
  6. Brush tops with more melted butter/oil and bake for 15-20 minutes until golden brown.
  7. While baking, warm honey in a saucepan and stir in red chili flakes for the drizzle.
  8. Once baked, let cool slightly before drizzling with chili honey.
