1 whole chilled duck
½ teaspoon sea salt
½ teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon dried thyme
½ teaspoon cracked black pepper
½ cup orange juice
2 tablespoons fig jam
2 tablespoons maple syrup
1 tablespoon soy sauce or coconut amino acids
1 teaspoon balsamic vinegar
1 tablespoon corn starch
Instructions
Preheat the oven to 375°F (190°C). Pat the chilled duck dry with paper towels and season the cavity with sea salt and pepper.
Rub the outside of the duck with garlic powder, oregano, thyme, and black pepper. Place fresh rosemary and thyme inside the cavity.
In a saucepan, combine orange juice, fig jam, maple syrup, soy sauce (or coconut amino acids), balsamic vinegar, and corn starch over medium heat until blended.
Place the duck on a roasting rack in a pan. Roast for about 90 minutes, basting with glaze every 30 minutes until skin is golden brown.
Allow the duck to rest for 10–15 minutes before carving.
