  • 2 lbs red potatoes
  • 1 stick (1/2 cup) butter
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C). Add butter to a 9×13 baking pan and place it in the cool oven to melt as it preheats.
  2. Wash and cut the red potatoes in half, scoring each half lightly.
  3. Mix the grated Parmesan, 2 tablespoons of herb seasoning, salt, and pepper in a bowl.
  4. Remove the pan from the oven once the butter has melted. Sprinkle half of the seasoning mixture into the pan.
  5. Place the scored potatoes cut-side down on top of the seasoning mix.
  6. Spray nonstick cooking spray over the potatoes and sprinkle with remaining seasoning.
  7. Bake uncovered for about 40 minutes until tender and golden brown.
