  • 1 large round loaf of crusty bread
  • 1 cup (2 sticks) unsalted butter, softened
  • 8 cloves of garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons fresh chives, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 cup shredded mozzarella or parmesan cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine softened butter, minced garlic, parsley, chives, salt, and pepper.
  3. Make diagonal cuts across the top of the bread without cutting all the way through.
  4. Rotate the loaf and make another series of diagonal cuts to create a crosshatch pattern.
  5. Spread the garlic butter mixture between each cut thoroughly.
  6. If desired, sprinkle shredded cheese between cuts.
  7. Wrap the loaf in aluminum foil with the top slightly open.
  8. Bake for 15-20 minutes; then uncover and bake for an additional 5-10 minutes until golden brown.
  9. Allow to cool slightly before serving warm.
