  • 4 pounds boneless beef shoulder (fat trimmed)
  • 1 large yellow onion (sliced)
  • 1 can (12 ounces) ginger beef broth
  • 12 cups BBQ sauce
  • 1 pound elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2 cups whole milk (warmed)
  • 4 cups shredded sharp cheddar cheese

Instructions

  1. Place the trimmed boneless beef shoulder in the slow cooker or Instant Pot; layer sliced onions on top. Pour in ginger beef broth.
  2. For Instant Pot, set to high pressure for 60 minutes; for slow cooker, cook on low for 6-8 hours until tender.
  3. Boil salted water in a large pot; cook elbow macaroni according to package instructions until al dente.
  4. In a saucepan, melt butter over medium heat and stir in flour to create a roux. Gradually whisk in warmed milk until smooth; stir in shredded cheddar cheese until melted.
  5. Shred cooked beef using two forks; combine macaroni, pulled beef, and cheese sauce in a large bowl and mix well.
  6. Serve warm with extra BBQ sauce drizzled on top.
