  • 4 mini pumpkins or ramekins
  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Prepare mini pumpkins by cutting off the tops and scooping out the insides, or set aside ramekins.
  3. In a mixing bowl, whisk together heavy cream, sugar, egg yolks, vanilla extract, pumpkin puree, cinnamon, ginger, and salt until well combined.
  4. Pour the mixture into your prepared containers until three-quarters full.
  5. Place containers in a larger baking dish filled with hot water halfway up their sides.
  6. Bake for about 30 minutes until edges are set but centers jiggle slightly.
  7. Cool at room temperature before refrigerating for at least two hours.
  8. Just before serving, sprinkle sugar on top and caramelize using a kitchen torch.
