  • 280 g pumpkin purée (room temperature)
  • 75 g vegetable oil (room temperature)
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • 200 g butter (softened)
  • 15 g dark brown sugar
  • 100 g full-fat cream cheese (softened)
  • 345 g powdered sugar (sifted)
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F) and line a cupcake tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin spice.
  3. In another bowl, mix dark brown sugar, pumpkin purée, vegetable oil, eggs, and vanilla until smooth.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed—avoid overmixing.
  5. Scoop the batter into liners, filling them two-thirds full. Bake for about 23 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before frosting with a mixture of butter, brown sugar, cream cheese, powdered sugar, and vanilla.
