  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon paprika, plus more for dusting

  • 2 tablespoons fresh chives, finely chopped (for stems and garnish)

Instructions

  1. Cook the eggs by placing them in a saucepan covered with cold water. Bring to a boil, then remove from heat and cover for 10 minutes.
  2. Prepare an ice bath while the eggs sit. After 10 minutes, transfer the eggs to the ice bath to cool for at least 5 minutes.
  3. Peel each egg under cool running water for easier shell removal.
  4. Slice the eggs in half lengthwise and scoop out the yolks into a bowl.
  5. Mix yolks with mayonnaise, mustard, salt, pepper, paprika, and optional food coloring until smooth.
  6. Pipe the yolk mixture into egg whites using a piping bag for a nice swirl.
  7. Create ridges with a knife or toothpick for a pumpkin effect and insert chive pieces as stems.
  8. Dust with additional paprika and chill before serving.
