  • 3/4 cup granulated sugar

  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 1/2 teaspoons vanilla
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar (for topping)
  • 1/4 cup chopped pecans (for topping)
  • 1 1/2 cups very hot water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves.
  3. In another bowl, combine pumpkin puree, milk, melted butter (or vegetable oil), and vanilla until smooth. Mix wet ingredients into dry until blended.
  4. Spread batter in an 8-inch casserole dish and sprinkle topping made from granulated sugar, brown sugar, and chopped pecans evenly over the batter.
  5. Pour very hot water over the cobbler without stirring. Bake for about 40 minutes until set. Let cool for 5-10 minutes before serving.
