  • 6 (8-inch) tortillas
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/3 cup melted butter
  • 4 oz cream cheese
  • 1/4 cup powdered sugar
  • 3/4 cup canned pumpkin puree
  • 1/2 tsp pure vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 cup heavy whipping cream
  • 2 tbsp powdered sugar (for whipped cream)
  • Chopped pecans (for garnish)

Instructions

  1. Preheat oven to 400°F. Cut tortillas into rounds using a cookie cutter.
  2. Mix granulated sugar and cinnamon on a plate. Brush melted butter on both sides of tortilla rounds and coat with the sugar mixture.
  3. Place coated tortillas between muffin cups and bake for about 10 minutes until golden brown. Cool in the pan.
  4. In a bowl, whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  5. In another bowl, beat cream cheese and powdered sugar until smooth, then add pumpkin puree, vanilla extract, and pumpkin pie spice.
  6. Assemble tacos by filling each shell with pumpkin mixture and topping with whipped cream and chopped pecans.
