  • 6 slices turkey bacon
  • 4 sweet onions
  • ½ cup apple cider
  • 1½ cups ricotta cheese
  • 1⅓ cups pumpkin purée
  • 2 cups grated mozzarella cheese
  • Fresh sage leaves
  • 2 sheets frozen puff pastry

Instructions

  1. In a skillet over medium heat, cook the turkey bacon until crispy. Remove and drain on paper towels.
  2. In the same skillet, add sliced onions with salt and pepper. Cook over medium-low heat for 25–30 minutes until caramelized. Add apple cider in the last five minutes.
  3. Preheat the oven to 400°F (200°C). Roll out puff pastry sheets on a floured surface and place them on parchment-lined baking sheets.
  4. In a bowl, mix ricotta cheese with pumpkin purée, salt, and pepper. Spread this mixture onto the pastry edges.
  5. Layer on caramelized onions, mozzarella cheese, and crumbled turkey bacon.
  6. Top with fresh sage leaves and brush edges with an egg wash made from whisked eggs and water.
  7. Bake for about 25–30 minutes until golden brown.
