  • ⅓ cup granulated sugar (more for topping)
  • ⅔ cup pumpkin puree
  • ¼ teaspoon kosher salt

  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • Tiny pinch ground cloves
  • 34 small-medium pumpkins

Instructions

  1. Prepare mini pumpkins by washing, cutting off the tops, and hollowing them out.
  2. In a mixing bowl, whisk egg yolks and granulated sugar until light and creamy. Add pumpkin puree, heavy cream, vanilla bean paste, salt, and spices; mix until smooth.
  3. Pour custard mixture into prepared pumpkins or ramekins. Place in a water bath and bake until just set.
  4. Chill in the refrigerator for at least 4 hours. Before serving, sprinkle sugar on top and use a kitchen torch to caramelize until golden brown.
