  • 2 green onions, sliced
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce or tamari
  • 1 tbsp chili crisp
  • 2 tbsp peanut butter or tahini
  • 2 tbsp rice vinegar
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1/2 inch piece ginger, grated
  • Salt and pepper, to taste

Instructions

  1. In a mixing bowl, whisk together sesame oil, soy sauce (or tamari), chili crisp, peanut butter (or tahini), rice vinegar, lime juice, honey, grated ginger, salt, and pepper until smooth.
  2. Cook jasmine rice according to package instructions; using day-old rice enhances the texture.
  3. In a large bowl, combine cooked rice with shredded cabbage, cucumber slices, bell pepper strips, grated carrot, sugar snap peas, and green onions. Toss gently.
