  • 1 tablespoon olive oil
  • 1/2 yellow onion, diced
  • 6 cloves garlic, minced
  • 16 ounces ground turkey or chicken
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • Fresh cracked pepper
  • Shaved Parmesan
  • Fresh chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté diced onion with salt and pepper until translucent (3-4 minutes).
  2. Add minced garlic and Italian seasoning; sauté until fragrant (about 30 seconds). Stir in tomato paste and cook for another minute.
  3. Incorporate ground turkey or chicken, breaking it apart as it cooks until browned.
  4. Pour in chicken broth, crushed tomatoes, ravioli, salt, and pepper. Bring to a simmer for 3-5 minutes until ravioli are al dente.
  5. Mix in fresh spinach and heavy cream until spinach wilts. Adjust seasoning as needed.
  6. Serve garnished with shaved Parmesan and parsley.
